The fruit is grown on Oliver’s Family farm in the Yarra Valley. Sheep keeping the grass low and the trees fertilsed. All we have to do is mill the fruit. Leave it for a week to develop texture and depth. Then press!
We allow the fermentation to spontaneously occur. We put a small portion in old oak and the rest into stainless steel, capturing a fresh, youthful beverage. – Fin Wines
