70% King Valley Dolcetto (20% whole bunch) plus 30% Zibibbo – Both held on skins for 14 days, pressed to tank to settle then into old oak barrels for 5 months, racked back to tank for one month. No additions apart from a small amount of sulphur prior to bottling. Red berries and winegums on the nose, savoury blackberry and cherry tartness, amaro-like light spice, crisp and refreshing acidity. Chill it down and watch it disappear!! – Defialy
