Fallow Wines grew from a love of making. It started with baking sourdough, making home brew and cured meats. From a barrel of Pinot made in the family shed, the label has grown to five different wines and a cider made in an urban winery in Healesville.
They organically farm just over a hectare of grapes across two Yarra Valley sites and work closely with select growers for some of their other wines. Working with a belief that good wine is grown in the vineyard they simply guide the fruit in the winery with the aim of making beautiful natural wine without any additions other than small amounts of sulphur if needed.

The 2020 ‘Rosa’ is made from just 700kg of hand-picked Cabernet Sauvignon from the hills in the back of Healesville surrounded by forest. Half direct pressed, half destemmed to create a natural semi-carbonic fermentation and left to ferment until dry before being aged in old barrels before being bottled in November without any additions including sulphur. Only 30 cases were made.

This wine pours a lovely vibrant light red with bright lifted jube-y red fruit aromas and a juicy plush mouthfeel. Super soft & supple fine tannins glide across the palate. We did find it needed a little bit of time to open up, so if possible, pull the cork about 30 mins before consuming and then it’s an absolute dream to drink!
