With the retirement of Phillipe, Domaine Bornard is now in the very capable and talented hands of his son Tony. Tony carrying on the legacy, and keeping the famous fox symbol, and he is particularly interested in how he manages the soil in his vineyards to ensure longevity for the vines through its health. This is reflected in his decision since 2018 to exclude certain wines from submission to the appellation authorities, so he can make wines that truly reflect the terroir and don’t bend to the more conservative members requirements.
Savagnin from Arbois-Pupillin which was macerated and fermented for several months (until the April of the following year) in an Italian amphora, removed and pressed off skins, then was returned to the amphora for its aging. It is noticeably unfiltered and absolutely delicious. This is a great example showing how Savagnin can be macerated but still retain its characteristic aromas and flavours.
