With the retirement of Phillipe, Domaine Bornard is now in the very capable and talented hands of his son Tony. Tony carrying on the legacy, and keeping the famous fox symbol, and he is particularly interested in how he manages the soil in his vineyards to ensure longevity for the vines through its health. Since 2018 Tony has chosen to exclude most of his wines from submission to the appellation authorities, so he can stay as true to terroir expression as possible. The Vin Jaune however is one of the few he still uses the Arbois Pupillin appellation for.
There are strict rules relating to the production of Vin Jaune or ‘yellow wine’ in the Jura. It is matured in old 228 litre casks which are not topped up. The wine must be made only from the Savagnin grape variety and the vines must lie within the defined Jura region. By law the wine can only be sold in the special 620 ml format bottles.
The maturation must continue for a minimum of 6 years and 3 months. This means that a film of yeast develops on the surface of the wine (known as a voile) thus protecting it from the oxygen in the gap in the barrel. However some oxidation occurs giving the wine some sherry-like characteristics even though it is never fortified like sherry.
2015 has a powerful nose of nuts, curry, Asian spices and smoked bacon. Powerful on the palate, with lovely acidity and balanced oxidation.
