Nuestra Soledad is made from 100% espadin agave from San Baltazar Guelavila, Oaxaca. Roasted in pit ovens with mesquite and oak, fermented in open-air wooden vats, and double distilled in copper alembic stills. Nuestra Soledad San Baltazar is made with agave Espadin that is cultivated in the highlands, where strains of Espadin have been grown for over 100 years. Don Gregoio’s Espadin grows at about 5,500 feet in limestone-heavy soil. The concentration of sugars in his agave result in a refined Espadin with great character. This is a rich and full Mezcal that stays long on the palate.
Oaxaca is the most geographically diverse state in Mexico, with a wide array of microclimates, vegetation, and ecosystems. Nuestra Soledad is comprised of six distinct expressions of mezcal from six different regions of Oaxaca, intended to highlight elements of terroir in mezcal production. Made by the same producers as El Jolgorio, Nuestra Soledad is made using 100% agave Espadín, most often harvested in remote areas with wild vegetation and unique soil types.
