Aglianico It’s pressed directly after fermentation is put into the bottle the following May along with some sweet Aglianico from the previous vintage. The second fermentation takes place in the bottle and there is no disgorgement, resulting in a dry sparkling wine with Griottes cherry, pungent acidity, and earthy minerality. -Giorgio De Maria
