James Madden lives, grows, produces and bottles all the Scintilla wines on his little slice of paradise in the Adelaide Hills, South Australia. All Scintilla wines are produced from vines grown and managed with organic and/or biodynamic principles. With everything made with minimal intervention, all grapes are hand picked and fermented with wild yeast.
2022 More Than White Pinot Gris saw 60% of the fruit whole bunch direct pressed to 800L terracotta huevo for primary fermentation and ageing on full solids. The other 40% was de-stemmed to stainless tanks and open top fermented for 7 days. spending 2 months on skins. Once primary fermentation calms it is closed off with a lid and left for 2 months on skins. Pressed and siphoned to old french puncheon. Gently racked off lees before winter. Racked, blended, and bottled in summer.
Dressed up as an orange wine. The phenolics are there, fine and savoury. Nice persistent line of acidity. Fruit flavours of strawberry and rhubarb.
