Not your average Prosecco, this is a seriously pure sparkling wine from one of the pioneers of natural wine in the Veneto region, Carolina Gatti. Made from 80-year-old, chemical free, traditional Belussi trellised Glera (Prosecco) vines on her family’s 200-year-old farm. Spontaneous first fermentation before being rested in concrete vats for a year. It is then bottled unfiltered, unfined and without sulphur but with some frozen juice from the original pressing which kickstarts a secondary fermentation in and creates its delightful natural fizz.
The result is a slightly cloudy, lightly sparkling, rich, complex wine with some delightful, preserved lemon-like saltiness. A perfect aperitivo!
