Matt Aulich grows grapes in Sunbury and the Diamond Valley while also sourcing fruit for Blood Moon Wines from other responsible growers all over Victoria. Matt takes a hands-off approach in the winemaking and the result is, textural wines that are considered and harmonic expressions of their time and place.
Matt has been cultivating Chenin Blanc vines at Longview Creek vineyard, between Sunbury and Riddells Creek, since 2015. Following organic practices, using only copper and sulphur sprays, mulches and manures. No herbicides. A lot of whippersnipping. Harvested 6th April. The owners currently have the property on the market so this will be the last vintage from this site by Blood Moon.
Whole bunches were pressed to tank then racked off gross lees after 2 days. Fermented in tank for 12 days then racked to older neutral French oak barrels for 9 months maturation. 50% left on lees through to bottling. Wild yeast fermented, unfiltered and unfined. No additions apart from sulphur.
Sea spray aromatics held up against, lemon curd, lemon myrtle, dried apple and faint brioche. A crackle of acidity against a saline and briny palate, with a long finish.
