Currently produced in a variety of sheds in the Adelaide Hills, Les Fruits draws on its fruit from there, Barossa Valley and most recently McLaren Vale. All vineyards are farmed naturally using organic and/or biodynamic principals. Winemaking is traditional, or as Les says “lazy” with a strict “do nothing unless it needs to be done” philosophy. More no-fi than lo-fi. No fining, no filtration, and only homeopathic doses of sulphur before bottling. Why?… To give the wines their best chance to express their place and personality.

Chevy is around 60% Chardonnay and 40% Sauvignon Blanc from the Top Range vineyard on the edge of the Adelaide Hills GI. Organic farming. Hand harvesting with sorting in the vineyard.

Brilliant golden straw. Great clarity from the natural settling. Unashamedly inspired by the blended white appellation of Cheverny in the Toiraine, Loire Valley. Importantly the expressions of the two varieties are seamlessly blended. Bright orchard fruits of apple and quince with a little perfume of dried yellow flowers. Softly textured from its long tank aging on fine lees, a little savoury reduction replaces the Loire’s minerality, citrus pith and yellow apple fruits. Slippery with a savoury edge from the pithy fruit expression.
