Grown by the awesome people at Chalmers the grapes came in at full ripeness. I fully destemmed and partially crushed them and took the whole fermentation through on the skins.
Hand crank pressed into tank and I let it go through natural malo. I racked off the lees a couple of times, and bottled using a bump of sulphur.
This wine was made with the generosity of space and equipment from Al Reed and Charlie Osborne at Konpira Maru.
The wine is boozy as hell at 13.3% It displays ripe golden apple hence the label and has honeysuckle floral, bee pollen and finishes nice and salty.
