It’s our 2nd release since taking over the farming of this unique site. A combination of both bush and trellis vine. Over 21 varieties are co-planted with 5 clones of Chenin Blanc and 3 clones of Viognier being the most dominant. To add to that there is Chardonnay, Riesling, Gewurtztraminer, Savagnin, Verdelho, Arneis, Pinot Gris, Aramon Noir (rose variety indigenous to the Languedoc) Grenache, Cabernet Sauvignon, Malbec, Merlot, Dolcetto, Nebbiolo… I am four varieties short! All de-stemmed and fermented for 2 weeks on skins. Wildly aromatic. Viognier leads, solo of Gewurtz followed by a chorus of the other 19 varieties. There is a lavender herbal nose that is so weird yet so pretty. Its too hard to explain. The palate is Tropicana partying with fruits from the forest.
All wines are produced from vines grown and managed with organic and/or biodynamic principles without being certified. All the grapes are carefully hand-picked then processed with a shovel and a fork. All the wines gently transferred by siphon using gravity and are not fined or filtered. No additions whatsoever; apart from love, work and luck. All wines are bottled at the winery under vacuum, under TCA checked natural cork.
