Lucy M Tête d’Oeuf is is sauvignon blanc with pinot gris and blanc in the mix. The fruit is destemmed sauvignon blanc, left to soak and start ferment on berries for one week. This helps the perfumed notes in the wine. It’s then pressed and fermented and aged in 680L vitrified ceramic eggs. At bottling the wine is blended with barrel-fermented pressings of pinot gris and pinot blanc Anton’s wines are made on the Lucy Margaux Farm in Basket Range, South Australia. Lucy M wines are made from organically farmed grapes, picked early for lower alcohol and vinified with zero additives. The wines change every year but one thing is constant: No additions, just grapes.
