D5V12 clone Pinot Noir originates from Beaujolais and was the first clone brought to Australia in the 60’s. This little plot was reverted to cane pruned this season. This coupled with the intense heat kept yields down but the concentration was fantastic. The fruit was 100% de-stemmed looking for fresh focussed fruit and was open top fermented for 2 weeks. Pressed with a touch of sugar before the end of primary fermentation and racked to 7 year old french oak barriques to rest and unfurl for 10 months. Bottled in spring. – Scintilla
