100% Pinot Grigio from Forest Range. Old French oak hogshead barrel heads are removed and packed with some whole bunch and others with de-stemmed fruit. The heads are put back in and the barrels were laid down for fermentation. 6-month maceration follows and is pressed and returned to barrel and bottled in summer. Campari esc nose, juicy fuji apple, raspberry and rhubarb juicy mid-palate, undertones of musk stick. Fine apple skin tannins.
All wines are produced from vines grown and managed with organic and/or biodynamic principles without being certified. All the grapes are carefully hand-picked then processed with a shovel and a fork. All the wines gently transferred by siphon using gravity and are not fined or filtered. No additions whatsoever; apart from love, work and luck. All wines are bottled at the winery under vacuum, under TCA checked natural cork.
