Predominantly whole bunch malbec, with some whole bunch cabernet sauvignon, de-stemmed shiraz and de-stemmed cabernet sauvignon and sauvignon blanc co-ferment. We purposely have held onto this wine because it screamed for it and has shown to have loved it. At first it was a wild beast that was very stemmy. We do know though that when you bottle preservative free the stem and wood fades from the wine and the fruit slowly starts to come to the front. This is what has happened here. It’s perfectly in balance and it truly is a pleasure to release a wine to people when it is coming into its optimum drinking window.
