The grapes from this Poulsard Rose comes from 45 year-old vines in clay and gravel. The wine was native fermented and rested in stainless. Subtle crushed florals, wild raspberry, spring rhubarb, and heaps of salty minerality flow throughout this bone dry, slender, savoury pink.
The grapes are 100% hand-harvested, then sorted out before going in vats, in order to eliminate the unmatured and damaged ones. Vatting is long and divided into three steps: pre-fermenting maceration, maceration, post-fermenting maceration. The wines are then aged mostly in oak barrels (around 18 months), of which a quarter is changed every year.
